Chicken Milano


1 T. butter
2 cloves minced garlic
1/2 cup chopped sun-dried tomatoes
1 cup chicken broth
1 cup heavy cream
2 T. vegetable oil
2 T. chopped fresh basil
8 oz. fettuccini noodles
salt and pepper


1. In a large saucepan over low heat, melt butter; add garlic and cook 30 seconds.
2. Add tomatoes and 3/4 cup chicken broth, bring to a boil.
3. Reduce heat and simmer, uncovered, 10 minutes.
4. Add cream and return to a boil; stirring.
5. Simmer until sauce thickens.
6. Salt and pepper chicken on both sides.
7. Warm oil in a large skillet and saute chicken until cooked through.
8. Transfer chicken to a board, cover, and keep warm.
9. Add remaining chicken broth to the skillet and bring to a boil.
10. Reduce heat, add the cream sauce and stir in basil.
11. Meanwhile, cook fettuccine according to package directions.
12. Transfer cooked pasta to a bowl and toss with 4 T. of the sauce.
13. Cut each chicken breast into 3-4 diagonal slices.
14. Transfer pasta to serving plates; top with chicken and cream sauce and serve.
