Chicken Fried Rice

cut into ½ inch pieces
4 tsp. vegetable oil
½ cup onion chopped
½ cup carrots sliced
½ cup frozen peas thawed
2 tsp. minced garlic
2 eggs beaten
3 cups cooked long grain rice
3 T. soy sauce
1 T. toasted sesame oil
¼ cup green onions sliced
salt and pepper

1. Heat 2 tsp. oil in a large skillet over medium high heat.
2. Season chicken with salt and pepper to taste and place in a single layer in the pan.
3. Cook 4-5 minutes or until browned and cooked through.
4. Remove chicken from pan and cover with foil to keep warm.
5. Add 1 tsp. oil to the pan; add onion and carrots and cook until softened.
6. Add garlic and cook 30 seconds.
7. Remove vegetable from pan and cover with foil to keep warm.
8. Add remaining oil to pan; add eggs and scramble.
9. Add cooked rice, chicken, cooked vegetables, and peas to the pan.
10. Stir in soy sauce and sesame oil; mix and heat until warmed through.
11. Sprinkle green onions on top and serve.
